Secret Ingredient: Avocado
Avocado in cookies? No way Jose!
After you taste these scrumptious morsels you won't believe it! Nor will you believe that these these babies have 1/2 the butter of normal cookies. With that, the avocado, the nuts, and the oats, these cookies are basically health food! So go ahead and eat 12. I just did :)
Now you may be hesitant at first: they sound wierd, and the batter has a slight green tint. They also don't bake into flat cookies, and retain a semi-clump form. In fact, the first time I made these, all my mom had to say was- dang those are some ugly cookies- and thus ordained them "Ugglies." The name has stuck ever since.
But trust me on this. A good friend once told me that the wierdest people in life are often the ones most worth knowing. I'll take the liberty in saying that the same applies to cookies. These cookie clusters are undeniably strange, but you don't wanna pass over these duckies just cause they're ugly. If you do, your tastebuds will be sad that they are missing out on all the cinnamony, chocolately-chip, nutty, naturally-reduced-fat goodness that these cookies have to offer.
So here's how its done:
- 1/2 cup unsalted, softened butter
- 3/4 cup packed brown sugar
- 1/2 cup sugar
- 1/2 cup avocado- mashed into a pulp
- 1 egg
- 1 teaspoon vanilla
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 and 1/4 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 cups oats
- 12 ounces semi-sweet chocolate chips
- 1 cup walnuts, chopped
2. Beat butter with the brown sugar and sugar until light and fluffy.
3. Beat in the avocado.
4. Add the egg and the vanilla extract- mix it all up.
5. Sift flour, baking soda, salt and spices into the butter mixture.

6. Mix in the oats, and fold in the choco-chips and walnuts
7. Try to form round-ish cookies
8. Bake 9-11 minuites
